Granola Cookies

Chewy and moist.

  • 3/4 cup butter OR margarine
  • 1/4 cup brown sugar
  • 1/4 cup Karo® Light Corn Syrup
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups granola cereal, large chunks crumbled
  • 1-1/2 cups chopped dried apricots


  1. Preheat oven to 375°F.
  2. Cream butter and sugar in a large bowl with mixer at medium speed. Beat in corn syrup, egg and vanilla. Combine flour, baking soda, cinnamon and salt in a small bowl. Add to butter mixture; mix well. Stir in granola and apricots.
  3. Drop by tablespoons onto lightly greased baking sheets.
  4. Bake 8 to 10 minutes until edges are golden brown. Cool on wire racks.
