Pralines and Cream Bread Pudding

  • 1 cup Karo® Light Corn Syrup
  • 1 package butterscotch chips, divided
  • 1/2 teaspoon ground cinnamon
  • 4 eggs
  • 1-1/2 cups half & half
  • 6 cups cubed bread (slightly stale works best)
  • 1 cup slivered almonds OR chopped pecans, toasted
  • Whipped cream


  1. Preheat oven to 350°F.  Spray 8 x 8-inch baking dish with cooking spray 
  2. Heat corn syrup in a large microwave-safe bowl on HIGH for 1-1/2 minutes, until bubbles start to form around the edge.
  3. Stir in 1 cup butterscotch chips and cinnamon until smooth.
  4. Beat eggs and half& half together. Add to butterscotch mixture and whisk until smooth. Pour in bread cubes stirring to coat. Soak for 20 minutes.
  5. Place half of bread cubes in baking dish; sprinkle with remaining butterscotch cups and 1/2 of the almonds. top with remaining bread cubes.  Carefully pour butterscotch mixture over bread; press down with spatula so that all pieces are coated.  Sprinkling with remaining almonds.
  6. Bake for 55 to 65 minutes until center puffs. Serve with whipped cream.
