Mini Pecan Pies in Phyllo
Is it a cookie? Is it a pie? It's just elegant and delicious.

Bake Time: 15 to 20 minutes
Yield: 45 cookies
- 1 egg
- 1/3 cup Karo® Light Corn Syrup
- OR Karo® Dark Corn Syrup
- 1/3 cup sugar
- 1 tablespoon butter OR margarine, melted
- 1/2 teaspoon pure vanilla extract
- 2/3 cup chopped pecans
- 45 mini phyllo shells (3 boxes)
- Preheat oven to 350°F.
Whisk egg, corn syrup, sugar, butter and vanilla in a bowl until smooth. Stir in pecans. Place phyllo shells on a lightly greased baking sheet.
Carefully spoon filling into each shell, filling about 2/3's full.
Bake for 15 to 20 minutes until filling appears set. Cool on pan.
