Chewy and moist.

Yield: 3 dozen cookies
3/4 cup butter OR margarine
1/4 cup brown sugar
1/4 cup Karo® Light Corn Syrup
1/2 teaspoon pure vanilla extract
3/4 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3 cups granola cereal, large chunks crumbled
1-1/2 cups chopped dried apricots
Preheat oven to 375°F.
Cream butter and sugar in a large bowl with mixer at medium speed. Beat in corn syrup, egg and vanilla. Combine flour, baking soda, cinnamon and salt in a small bowl. Add to butter mixture; mix well. Stir in granola and apricots.
Drop by tablespoons onto lightly greased baking sheets.
Bake 8 to 10 minutes until edges are golden brown. Cool on wire racks.
