Mint Cookie Bars

These fudgy chocolate bars are infused with chunks of chocolate and mint candies!

  • 1-1/4 cups brown sugar
  • 1/2 cup butter OR margarine, softened
  • 2 eggs
  • 1/3 cup Karo┬« Dark Corn Syrup
  • 1 teaspoon pure vanilla extract
  • 1-3/4 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon Argo┬« Baking Powder
  • 1 cup semi-sweet chocolate chips
  • 2 packages (4.67 ounces each) creme de menthe thins, chopped


  1. Preheat oven to 350°F.
  2. Beat brown sugar, butter, eggs, corn syrup and vanilla in large mixer bowl until well blended. Slowly add in flour, cocoa powder, salt and baking powder. Beat until combined.  Stir in chocolate chips and all but 1 cup of the mint candies.
  3. Press into a greased 13×9 inch pan.  Bake for 18 to 22 minutes until cookie bars are set but still soft. Sprinkle the reserved candies on top.  Cool and cut into squares.
