Brownie Pudding

A flavor mashup with brownies and traditional pecan pie ingredients transformed into a bread pudding.

Bread Pudding

  • 6 cups coarsely chopped brownies
  • 2 tablespoons butter OR margarine, melted
  • 1 cup Karo┬« Light OR Dark Corn Syrup
  • 1 cup half & half
  • 3 eggs
  • 2/3 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup Pecan Halves


  1. Spray 2-quart baking dish with cooking spray.

    Place brownie chunks in baking dish. Whisk butter, corn syrup, half & half, eggs, sugar and vanilla in a large bowl. Add pecans. Pour over brownies; let stand 15 minutes. (At this point, mixture can be covered and refrigerated up to 24 hours, if desired).

    Preheat oven to 350ºF.

    Bake pudding for 45 to 50 minutes, or until center is set.
