Coffee Buttercream Frosting
Creamy with a nice coffee flavor.
Prep Time: 10 minutes
Yield: 1 batch frosts and fills 1 (9-inch) 2-layer cake
1/2 cup butter OR margarine, softened
2 tablespoons Karo® Light Corn Syrup
1/2 teaspoon pure vanilla extract
1 dash salt
3 cups powdered sugar
1 tablespoon instant coffee powder, dissolved in 2 tablespoons hot water
1 to 3 teaspoons milk, as needed
Beat butter, corn syrup, vanilla and salt until creamy. Add powdered sugar and 1 tablespoon dissolved coffee. Beat until fluffy, adding additional coffee and/or milk, 1 teaspoon at a time to reach desired consistency and flavor.
Frost cake or cupcakes as desired. (Recipe frosts 24 cupcakes.)
