Pecan Country Coffee Cake
Awesome coffee cake for a early morning tailgate!

Yield: 8 servings
1/2 cup Karo® Light OR Dark Corn Syrup
1/4 cup butter OR margarine, melted
2 tablespoons brown sugar
1 cup chopped pecans
1-1/2 cups buttermilk baking mix
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/2 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 350°F.
Combine 1/4 cup corn syrup, butter and brown sugar in 8 x 8-inch baking pan. Spread mixture evenly in bottom of pan. Sprinkle with pecans.
Combine baking mix, sugar and cinnamon in medium bowl. Stir in remaining 1/4 cup corn syrup, milk, egg and vanilla until well mixed. Pour over pecan mixture in pan.
Bake 30 minutes or until wooden pick inserted in center comes out clean. Loosen edge with knife. Immediately invert onto serving plate. Serve warm.
