Easy Peanut Butter Toffee Crunch

Yield: 1 pound toffee


  • 1 cup sugar
  • 1/2 cup Karo┬« Light Corn Syrup
  • 1/8 teaspoon salt
  • 3/4 cup creamy peanut butter
  • 1 cup ground almonds, divided
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips


  1. Spray 13 x 9-inch baking pan with cooking spray.
  2. Stir sugar, corn syrup and salt together in 2-quart microwave-safe glass bowl with wooden spoon until blended.
  3. Microwave on HIGH for 5 to 6 minutes or until syrup is pale yellow. NOTE: CANDY IS VERY HOT. HANDLE CAREFULLY; DO NOT TOUCH HOT MIXTURE.
  4. Stir in peanut butter and 2/3 cup almonds. Microwave 1 to 2 minutes more or until nuts are lightly browned.
  5. Immediately stir in baking soda until foamy.
  6. Quickly pour mixture into prepared pan; spread evenly with spatula. Sprinkle chocolate chips on top, spreading to cover. Sprinkle with remaining 1/3 cup almonds.
  7. Score toffee into squares with a knife. When cool; break apart. Store in airtight container.
