Chocolate-Drizzled Peanut Bars

Yield:  60 bars

  • CRUST:
  • Mazola Pure® Cooking Spray
  • 3 cups flour
  • 1 cup (2 sticks) cold butter OR margarine, cut into pieces
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • FILLING:
  • 1/2 cup packed brown sugar
  • 1/2 cup Karo® Light Corn Syrup
  • 1/4 cup (1/2 stick) butter OR margarine
  • 1/4 cup heavy OR whipping cream
  • 1 teaspoon Spice Islands® 100% Pure Bourbon Vanilla Extract
  • 1/4 teaspoon lemon juice
  • 1-1/2 cups coarsely chopped roasted peanuts
  • CHOCOLATE GLAZE (recipe follows)
  1. Preheat oven to 350ºF. Spray a 15 x 10-inch baking pan with cooking spray.


  2. For CRUST: Beat flour, butter, sugar and salt in a large bowl at medium speed until mixture resembles coarse crumbs. Press firmly into prepared pan. Bake for 20 minutes or until golden brown.


  3. For FILLING: Combine brown sugar, corn syrup, butter and cream in a medium saucepan. Bring to boil over medium heat. Remove from heat and stir in vanilla, lemon juice and peanuts. Pour over hot crust; spread evenly.


  4. Bake 15 to 20 minutes or until set. Cool slightly and drizzle with CHOCOLATE GLAZE. Continue cooling on wire rack. Cut into 2-1/2 x 1-inch bars.


  5. CHOCOLATE GLAZE: Melt 2/3 cup (4 ounces) semi-sweet chocolate chips and 1 tablespoon butter in a small heavy saucepan over low heat, stirring until smooth.
