- 1/4 cup KaroŽ Light Corn Syrup
- 1/4 cup butter OR margarine, softened
- 3/4 teaspoon peppermint extract
- 1 to 3 drops desired food coloring
- 4 cups powdered sugar

- Combine corn syrup, butter, extact and food coloring in a large bowl. Mix thoroughly.
- Gradually beat in powdered sugar, using an electric mixer.
- Shape into small balls, about 3/4-inch in diameter. Place on parchment paper OR wax paper. Gently flatten each ball with a flat bottomed drinking glass that has been dipped in granulated sugar (to prevent sticking).
- Let mints stand at room temperature for 2 to 3 hours to dry. Store in a tightly covered containter.
- Varitation: Other flavorings also work well. Try almond, orange, lemon, raspberry or rum extracts!
