Dirty Soda

  • Yield: 10 servings
  • Prep Time: 10 mins
  • Cook Time: 15 mins
  • Passive Time: 30 mins chill time

Ingredients

For Fruit Syrup:

  • 2 cups frozen fruit, such as mixed berries (see note below for flavor variations)
  • ½ cup Karo® Light Corn Syrup
  • ¾ cup water
  • 1 tablespoon fresh lemon or lime juice
  • Pinch of salt

For Dirty Soda (one serving):

  • 2 tablespoons fruit syrup
  • 1 cup chilled soda or sparkling water
  • 1½ to 2 tablespoons heavy cream or unsweetened coconut cream
  • Ice
  • Fresh fruit (for garnish, optional)

Directions

For the Fruit Syrup:

  1. Add fruit, Karo® Light Corn Syrup, water, and salt to a small saucepan.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Avoid a rapid boil.
  3. Simmer berries for 6–8 minutes. Stir occasionally and lightly mash the fruit as it softens. (The goal is to soften the fruit and extract its flavor, not to reduce the liquid.)
  4. Remove the saucepan from the heat and allow the fruit to steep in the syrup for 10 minutes.
  5. Stir in the fresh lemon or lime juice.
  6. Pour the mixture through a fine-mesh sieve into a measuring cup. Gently press the fruit to release the liquid, but do not force the pulp through the sieve.
  7. If the syrup appears too thick, add water (1 tablespoon at a time) until it is thin and easily pourable.
  8. Cool the syrup completely before transferring it to an airtight glass bottle. Refrigerate until ready to use.

For the Dirty Soda:

  1. Fill a tall glass with ice.
  2. Pour 2 tablespoons of homemade fruit syrup over the ice.
  3. Add the chilled soda or sparkling water and stir well to combine.
  4. Slowly pour the cream over the top to create a swirled appearance.
  5. Garnish with fresh fruit, if desired. Stir before drinking and serve immediately.

Notes

Use the basic syrup recipe above to get creative with your dirty soda by changing out the fruit in the syrup, or the type of soda or cream that you use for the final drink! Here are some of our favorite variations:

For a Pineapple Coconut Dirty Soda: Substitute 2 cups of frozen pineapple in the syrup, then make your dirty soda with your favorite lemon-lime soda, and top with coconut cream instead of heavy cream.

For a Peach Cobbler Dirty Cola: Substitute 2 cups of frozen peaches in the syrup, then make your dirty soda with your favorite cola and top with heavy cream.
