Cranberry Walnut Bars

Ingredients

  • 2-1/2 cups all-purpose flour
  • 1 cup cold butter OR margarine, cut into pieces
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
Filling:
  • 1-1/3 cups Karo® Light Corn Syrup
  • 4 eggs
  • 1 cup granulated sugar
  • 3 tablespoons butter, melted
  • 2 cups fresh OR thawed frozen cranberries, coarsely chopped
  • 1 cup chopped walnuts
  • 1 cup white chocolate chips

Directions

  1. Preheat oven to 350°F. Spray 17 x 11 x 1-inch baking sheet with cooking spray. Beat flour, 1 cup butter, powdered sugar and salt together in a large bowl at medium speed until mixture resembles coarse crumbs; press firmly and evenly into prepared pan. Bake 15 to 20 minutes or until golden brown.
  2. While crust is baking, beat corn syrup, eggs, granulated sugar and melted butter in a large bowl until well blended. Stir in the cranberries and walnuts.
  3. Spread mixture evenly over hot crust. Sprinkle white chocolate chips over the top. Bake 20 to 25 minutes or until set. Cool completely on a wire rack before cutting into bars. Store leftover bars in refrigerator to keep fresh.
