Ingredients

  • 1/4 cup Karo® Light Corn Syrup
  • 1/4 cup butter OR margarine, softened
  • 3/4 teaspoon peppermint extract
  • 1 to drops desired food coloring
  • 4 cups powdered sugar

Directions

  1. Combine corn syrup, butter, extract and food coloring in a large bowl. Mix thoroughly.
  2. Gradually beat in powdered sugar, using an electric mixer.
  3. Shape into small balls, about 3/4-inch in diameter. Place on parchment paper OR wax paper. Gently flatten each ball with a flat bottomed drinking glass that has been dipped in granulated sugar (to prevent sticking).
  4. Let mints stand at room temperature for 2 to 3 hours to dry. Store in a tightly covered container.
  5. Varitation: Other flavorings also work well. Try almond, orange, lemon, raspberry or rum extracts!
