Mint Brownies

Ingredients

  • 1/2 cup butter OR margarine, softened
  • 3/4 cup sugar
  • 1/3 cup Karo® Dark Corn Syrup
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon peppermint flavor
  • 2 eggs
  • 2 ounces unsweetened chocolate, melted and cooled
  • 2/3 cup all-purpose flour
  • 3 ounces white chocolate, chopped
  • 4 to 6 crushed starlight mint can dies

Directions

  1. Preheat oven to 350°F. Spray an 8 x 8-inch baking pan with cooking spray.
  2. Beat butter and sugar in large bowl with electric mixer until fluffy. Add corn syrup, salt, vanilla and peppermint flavor; blend thoroughly. Add eggs one at a time, beating well after each addition. Stir in melted chocolate and flour; scrape down bowl occasionally.
  3. Spread into prepared pan. Bake for 30 to 35 minutes or until edges begin to pull away from the pan. Cool on wire rack.
  4. Melt white chocolate in a small microwave-safe bowl for 1 to 2 minutes, stirring frequently until smooth. Spread over brownies and sprinkle with crushed mints. Cool completely before cutting into squares.
