Old Fashioned Bran Muffins

Ingredients

  • 1/3 cup boiling water
  • 1 cup all-bran cereal
  • 1/2 cup buttermilk
  • 1/2 cup Karo® Dark Corn Syrup
  • 1/4 cup corn oil
  • 1/4 cup sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup raisins

Directions

  1. Preheat oven to 400°F.
  2. Pour boiling water over cereal in a medium bowl; let stand 5 minutes. Stir in buttermilk, corn syrup, oil, sugar and egg.
  3. Combine flour, baking powder, baking soda, salt and cinnamon in a large bowl. Stir in buttermilk mixture just until moistened. Stir in raisins. Divide batter evenly into 12 greased (2-1/2 inch) muffin cups.
  4. Bake 17 to 22 minutes or until tops spring back when touched. Cool 5 minutes; remove from pan.
