Valentine Scotcheroos

Ingredients

  • 1 cup Karo® Light Corn Syrup
  • 1 cup sugar
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • Optional, small Valentine can dies
  • Optional, red decorator icing*

Directions

  1. Spray a 12-inch pizza pan with cooking spray.
  2. Cook corn syrup and sugar together in a large saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a boil. Remove from heat. Stir in peanut butter; mix well. Add cereal; stir until evenly coated.
  3. Pour onto prepared pan. Pat into place with rubber spatula, making sure top is level.
  4. Melt chocolate and butterscotch chips together in saucepan over low heat, stirring constantly. Spread over cereal. Refrigerate at least 30 minutes.
  5. Decorate with candies or icing as desired.
  6. Recipe Note: Make smaller pizzas for gift giving using greased 8-inch round or heart shaped pans. Or form cereal into a large heart (free form style!) on a greased serving tray or baking sheet.
  7. * Use ready-to-decorate canned icings with tips attached for a quick and mess free way to write as well as make borders and other decorations!
